Nanaimo Mini Bites Recipe
One of my husband's favorite dessert treats is that the nanaimo bar. I made two different versions, which he couldn't decide which one he preferred. Last night Dave hosted his fantasy league which I always confirm to wear. I really like baking and whatever reason to try to it, I'm going beat . It's my first time making this for her friends and that they love them. They went rather well and I am so glad I put one aside for myself, because this morning they were all gone! Ingredient
  • 2 tablespoons of custard powder
  • 1/3 cup grated coconut
  • 1/3 cup chopped walnuts
  • 3 tbsp milk
  • 2 cups powdered sugar
  • 6 ounces of bittersweet chocolate divided
  • 1/2 cup butter softened and divided
  • 1 teaspoon vanilla
  • 1 cup graham crumbs
  • 1 egg


Instructions
  1. Preheat oven to 350° F, put the muffin liner within the pan and spray with cooking spray.
  2. Heat 2 ounces. chocolate and three tbsp. butter during a medium saucepan until the butter is melted. Stir until the chocolate is totally melted and therefore the mixture is well combined.
  3. Pour into a bowl or mixer and add the vanilla, graham crumbs, coconut, walnuts and egg. Stir well.
  4. Press the crumb mixture into rock bottom of the mini muffin tin bowl.
  5. Bake 5 minutes then cool completely
  6. Beat custard powder and milk with a mixer until blended.
  7. Add 1/4 cup of remaining butter, mix well.
  8. Add sugar gradually, beating well after each addition.
  9. Spoon it over the crust, adding about 1/2 tbsp of the pudding mixture to every bite.
  10. Heat the remaining cocoa and butter until the butter and chocolate are completely melted and smooth.
  11. Spread in each layer of custard with approximately 1 tsp for every bite.
  12. Spread it evenly with a knife and chill for a minimum of 2 hours.
