Summer Rolls Recipe - These summer rolls are packed filled with vegetables and
are great as an appetizer or maybe as a meal. you'll prepare a meal the night
before and luxuriate in it for lunch subsequent day.

Ingredient
- handful of mint (about 4 medium leaves per roll)
- 1 small cucumber, thinly sliced
- 1 small paprika, finely chopped
- 1 avocado, thinly sliced
- peanut sauce for serving
- 8–16 sheets of paper (this makes 8 but you'll need 16 if you would like to double the wrapper for every roll. More thereon below)
- 1 large carrot, peeled and thinly sliced
- 1 mango, thinly sliced
- 1 cup cabbage, grated
- Lettuce (you can use any vegetable here. I used about 4 large slices of collard greens)
Instructions
- Prepare the paper wrappers once you are able to roll them, but wet each wrap under water for five seconds. i prefer to use 2 packs per roll and rinse them under water at an equivalent time. you'll do that with only one packet if desired. Place the primary wrap (I found that doing this on parchment paper helped it less sticky). Place the second wrap on top of the primary in order that it's about an in. above it (this just gives you more room to figure with).
- Place a green leaf within the center of the paper (I split my leaf into small pieces to form it easier). Stack all of the vegetables, mango and mint in order that you're using 1/8 per roll. I usually just observe it to undertake and balance things out. Leave 1/2 inch clean on the edges.
- Start rolling up the wrap at one end and tuck it gently but tightly over the vegetables. Fold it sideways and continue rolling. Watch my video above to ascertain how I did it.
