This honey flapjack is made without refined sugar, packed with runny oats, nuts and chile blueberries.

Sticky Blueberry and Banana Flapjacks
Ingredient
  • 150g Chilean blueberries, roughly crushed
  • Walnut pieces 50g
  • 50g pumpkin seeds
  • 1 ripe banana, peeled and mashed
  • 60g of butter
  • 60g peanut butter
  • 75g honey plus 1 tablespoon.
  • 250g of oatmeal
  • 50g almonds, roughly chopped

Instruction
  1. Preheat the oven to the 160C fan / 180C fan / gas mark 4. Add 20 cm x 20 cm baking pan with parchment.
  2. Melt the butter, peanut butter and 75 g of honey in a large skillet. After it has melted and started to bubble, remove it from the heat and stir the remaining ingredients (except for additional honey). Mix well, put in a tin and flatten the surface. Bake for 35-40 minutes until firm and begin to brown.
  3. Heat additional honey in a small skillet and spread the flapjack surface. Cool it slightly and cut it into 12. Store in an airtight container after it has completely cooled, for up to 4 days.
