This
crockpot fried rice has no rice at all! Instead, the cauliflower bud pulsed in
a food processor to resemble rice. Boil until tender in a delicious
garlic-ginger sauce, then thrown with frozen vegetables, fresh green onions,
and vibrant cilantro, this dish will make you happy at dinner.
Crockpot Cauliflower Fried Rice
Ingredient
- 1 cup of frozen vegetable mixture
- 1/4 cup cilantro
- 1/2 cup of turkey ham, Boars Head, diced
- 2 tablespoons of soy sauce (low sodium) or to taste
- 2 heads of cauliflower
- 2 tablespoons of pure ginger garlic (or fresh garlic and ginger, peeled and chopped)
- 1/2 cup vegetable broth
- 2 eggs
- 1/4 cup green onions, diced
Instructions
- Cut the florets from each head of the cauliflower. Remove the stems. Place the florets in a large food processor. The pulse is broken.
- In a large crockpot, add the cauliflower crumbs, puree the ginger garlic, and vegetable broth. Cover and cook on high heat for 2 hours, or low heat for 3-4 hours.
- 30 minutes before serving, beat the eggs together and stir in a pan. Add eggs, frozen vegetables, and diced turkey ham (if desired) to the crockpot. Let it cook for another 30 minutes, or until the frozen vegetables warm. Stir in green onions and cilantro. Drizzle with soy sauce to taste.
