There isn't much nutrition there! Luckily, we fixed it with our Chicken Barbeque and Avocado Quesadillas. We made a selection of ingredients that skin traditional quesadillas while adding some nutrient-dense ingredients. That means you don't have to enjoy this quesadilla as an unhealthy appetizer. You can eat it as a filling (and, satisfying) lunch or dinner.

Barbeque Chicken and Avocado Quesadillas
Ingredient
  • 1 avocado, diced
  • 6 (6 inches) whole wheat tortillas
  • 1 large chicken breast, in bone with skin
  • 1/2 cup Barbecue Sauce
  • 1 cup grated mozzarella cheese, partially skimmed

Instructions
  1. Preheat the oven to 375 degrees F.
  2. Add chicken breast and 1/4 cup water to a small casserole pan, cover loosely with tinfoil and cook 45 minutes or until cooked and the juice is clear. Let the chicken cool until it can be handled, remove the skin and discard. Broken chicken with a fork.
  3. In a mixing bowl, mix the shredded chicken and barbecue sauce.
  4. Place one tortilla on a medium nonstick skillet and set it on medium heat. To half of the tortillas, sprinkle with 1 tablespoon of mozzarella, add 1/6 mixture of barbecued chicken, 1/6 diced avocado, sprinkle with another tablespoon cheese, and fold the tortillas.
  5. Cook on both sides for about 2 minutes or until the tortillas turn golden brown and the cheese melts.
