How did you enjoy our roast recipe this summer? This Paleo grilled pineapple chicken might be my personal favorite! It has the taste of this smoky barbecue, with a hint of sweetness and grilled pineapple ..is this better? A healthy summer dinner has never tasted so good!

Grilled Pineapple Chicken Paleo 
Ingredient
  • 2 lbs of boneless chicken legs (or breasts)
  • 1 fresh pineapple, skin removed and rounded with core removed
For The Seasoning
  • 1 tsp of smoked paprika
  • 1/2 cup of coconut amino
  • 2 teaspoons garlic powder
  • 1/4 cup water
  • 1/4 cup of tomato paste
  • 4-6 dates are pitted, soaked for 10-15 minutes in warm water to soften then dry
  • 2 teaspoons chili powder
For Serving and Topping
  • Chopped green onions (for topping)
  • White rice or cauli (rice culi for Whole30)
  • Green mix

Instructions
  1. Soak the dates in warm water as noted to soften.
  2. To make a marinade, place all the ingredients in a blender or food processor and run continuously to combine all the ingredients until smooth. Stop to scrape the side down as needed and start again.
  3. Place the chicken in a shallow bowl or plate and pour the seasoning on top. Throw to coat. Cover and chill for at least 30 minutes or up to 24 hours.
  4. When you are ready to bake, cut the pineapple into what it says. Cut the hard inner core from the round and set it aside.
  5. Preheat your grill to high heat (around 500 ° F). Add chicken and pineapple to the grill and cook, flipping once and spread the chicken with the remaining seasoning until cooked, about 5-6 minutes on each side depending on the size of the chicken. Remove pineapple when baking to your liking (we bake it only 3-4 minutes per side).
  6. Serve chicken and pineapple on the side you want, on top of rice or on vegetables (or vegetables and rice).
